Prime, awarded Sydney’s Best Steak Restaurant since 1999, has introduced a new French-influenced winter a la carte menu, along with a range of decadent truffle specials to complement the extensive steak menu comprising 18 premium cuts.

Prime’s truffle specials include:

  • Classic mushroom and truffle risotto topped with freshly shaved Tasmanian black truffles (entrée or main size)
  • French fries with black truffle and truffle pecorino
  • Black truffle butter

Seasonal entrées include:

  • Seared scallops with Jerusalem artichoke velouté, toasted hazelnuts from Piemonte and truffle oil
  • Sweet corn soup with spanner crab, coriander and chilli
  • Beetroot salad with blue cheese chantilly and caramelised pecans
  • Wagyu tartare (marble score 9+) with quail yolk, crispy shallots and toasted baguette
  • Charcuterie board for two, served with housemade bread, seasonal fruit, ‘pot au feu’, braised wagyu brisket terrine, chicken liver parfait, pork and duck rillette and optional pata negra jamón, aged for 36 months

Mains include:

  • Chicken ‘vol au vent’ with crispy puff pastry, smoked ham, mushrooms and a creamy truffle sauce
  • Lamb navarin, with braised lamb shoulder, pancetta, crispy polenta and winter vegetables
  • Butternut squash lasagna with dried ricotta, rocket pesto and pistachios
  • Poached snapper served with stuffed cabbage and scampi bisque

Housemade desserts created by Prime’s Pastry Chef Cherry Huang include:

  • Dark chocolate sphere filled with whipped milk chocolate ganache and crunchy streusel on a salted chocolate brownie, served with white chocolate vanilla chantilly and a hot chocolate sauce
  • Toffee nut delight with butter biscuit, praline chantilly, smoked vanilla crémeux, orange blossom sponge, toffee nuts, espresso reduction and coffee ice cream
  • Citrus baba with aged rum, mascarpone chantilly and orange marmalade
  • Chestnut and pear vacherin with vanilla poached pear, crispy meringue, chestnut cream and pear sorbet
  • Grand marnier soufflé with an orange sauce and chocolate ice cream
